A really nice coffee! The ground coffee smelled complex, especially next to its much more basic neighbors on the table. I picked up on tea-like notes that were delicate, unrefined sugar notes, and some dried fruits. The wet aroma was super sweet with a scent of cooked sugars in both the light and medium roast levels, and released fruited notes of fig bar filling, and date paste as well. My City roast showed an array of fruit notes alongside sweetness that echoes unrefined, rustic sugars. The flavor profile expands to include a plum tea note, tamarind drink, and dried unsulfered apricot (the dark brown type). Light roasts have a little more rustic appeal than when roasted to Full City, but also bring out a nice acidic impression that is enhanced by an orange peel note. Full City roasts are dense with chewy dark chocolate flavors, red raisin, and an aromatic hint of star anise.
